Vegan Blackberry Cobbler Bites
ingredients:
1 cup coconut milk (I use Trader Joe’s brand in the can)
1 cup flour (I use King Arthur unbleached all-purpose)
1 1/4 cup sugar (I use Wholesome Sweetness organic dark brown sugar)
1/2 cup earth balance natural buttery spread (melted)
2 cups fresh Blackberries
1/2 cup chopped walnuts
1/8 tsp vanilla
3/4 cup rolled oats (I use Bobs Red Mill organic whole grain) please don’t use those gummy quick oats that we grew up with!
rinse and dry blackberries
melt earth balance butter
mix 1 cup sugar and 1 cup flour into a bowl, whisk in the coconut milk. Add melted butter, oats, walnuts and vanilla. Stir well.
butter a bite-size muffin tin, or use a regular pie dish or small quiche type dishes.
pour batter in, filling about 3/4 full. sprinkle some blackberries on top and sprinkle a small amount of sugar over the top.
bake at 350 until knife comes out clean. they will be moist and chewy. baking time will vary from 25-60 minutes depending on which container you bake them in.
cool before serving.
